Still unable to tag. What's the problem?

I also used to be able to do this. Proper tagging adds massive value to an otherwise quite messy forum with limited search functionality. Why was it removed?

For some reason some guys who make really random tags still can do it, but I can’t

Something awry in SMF probably. Not sure. Send tags as a moderator report and it can be adjusted from there.

I'm not sure the mods will appreciate all the manual labor. Furthermore, it will not be common knowledge amongst forum members that they can add tags this way, so we'd still lose out on potential good metadata that would make the forum much more user-friendly. If the [Add Tag] functionality worked like before, it would be quick and easily accessible.

So it seems more logical to me, and I'd really appreciate it- if some of you rather spent that time trying to drill down on the actual issue instead.

I did not write SMF.  Sometimes updates fix and break things, or it could be from re-tooling done on the forum. For example, spam blocking, and that is something I am not willing to break.

Nobody is telling you to break it, and nothing is indicating that this is necessary. We are asking you/somebody involved to please investigate the issue in order to find out what it would take to fix it, so that massively valuable functionality to the forum can be restored.

Surely, it would be possible, even low-effort, to do some basic inquiry to the guy who did write SMF - or somebody on their support forum - in order to figure out what it would take to remove the tagging permission-restriction. It's not like it's some obscure functionality that is likely to have a deep bug that no other SMF host/user has experienced for over a year.

Most likely a small setting that has been activated/reset by mistake, and can be easily remedied.
